Meatless Meat Pasta with Marinara

I ate this meal even before becoming a vegetarian. I initially used ground beef for this meal. Then my friend with cholesterol concerns got me into eating ground turkey. When I became vegan I just used the meatless ground meat to adapt to this recipe.

Ingredients

1/2 package of meatless ground meat

Marinara sauce- as much as you like

Pasta-I like spaghetti for this meal

Onions

Garlic

Steps:

Cook the pasta to desired texture

In a second pot sautee onions and garlic

The meatless ground meat is alredy prepared. It just needs to be heated along with the sauce and season to taste

Once both pots are prepared combine ingredients and enjoy

Quick Fix Rice

I’ve mentioned it before and I will say it again. I love rice. I may not eat it often but when I do…it’s GOOOD. My favorite type of rice is Jasmine rice and I even though it may not be the healthiest meal on the menu you can definitely add some colors and health benefits.

Ingredients

1 cup Jasmine rice

1/4 canned black beans

1/4 chopped broccoli

Few onions slices

1/2 crushed garlic

Dash of cayenne pepper

Dash of oregano

Dash of paprika

Dash of salt

Dash of pepper

Steps

Cook rice based on packaging instructions

Add a separate pot sautee onions, garlic, broccoli, and black beans

Once rice is cooked, combine the vegatable and rice pot

Add seasoning to the combined dish and serve

*add other veggies to the mix and tell me what you think*

Chocolate Cupcakes

Yesssss! I love cupcakes but I’m lazy and store bought cupcakes have that synthetic taste to them. I found the best and easiest recipe for making cupcakes while using regualr cake mix.

Ingredients

Betty Crocker Devil’s Food Cake Mix

1 12 oz. can of coke (YES! I’m serious)

Pillsbury Vanilla Icing

Steps

Mix together the can of coke and the cake mix

Place batter in cupcake tin

Bake according to box instructions

Ice cupcakes!
